Simple Pancake Balls

Our kiddo has officially arrived and life as we know it has been turned completely upside down. We have have traded sleep in Saturday for cartoons at 8am and Tuesday Boozeday for afternoon baseball practice... it's a lot to get used to, but I wouldn't trade this time for the world. 

My eating habits change a lot when the kiddo is around. Breakfast is essential, even though I tend to recognize coffee as a major nutrition source most mornings. This was a super easy breakfast that put a major smile on his face. He loved that he could eat them with his hands and I loved that I was able to make them while still half asleep at 7:30 last Sunday morning. 

 

 

I made these by mixing up a boxed pancake mix and pouring it into my Babycakes Cake Pop Maker. I allowed them to cook about 8 minutes, periodically checking them to make sure they didn't burn. They were actually easier than regular pancakes, which I have a tendency to either overcook or undercook and they are "so cool" according to my 7 year old.
