Red Wine Hot Cocoa
When I was little, I remember feeling like life couldn't get any better than it was when I was wearing footy pajamas, watching Saturday morning cartoons, and drinking hot chocolate (with extra marshmallows). I remember feeling content and loved and smiling big when i watched my mom make it for me. Little did I know that 20 years later I'd discover that you can add red wine for a little extra happiness and that I'd trade in cartoons for Mistresses on ABC (which I'm obsessed with, by the way).
I played around with this recipe until it felt juuuust right. Using all chocolate chips made it too rich- but not in a good way and using all cocoa powder made it lackluster, but a perfect combination of the two seems to be the perfect balance.
- 1/3 cup semisweet chocolate chips
- 1/3 cup unsweetened cocoa powder
- 2/3 cup red wine (I used a Zinfandel. Use your favorite!)
- 3/4 cup milk
- 1/2 cup half & half
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- pinch of salt
Combine the chocolate chips, cocoa powder, wine, milk, half & half, and sugar in a sauce pot over medium-low heat. Don't let it boil. Technically, Alcohol doesn't begin to burn off until it reaches a boiling temperature of 173 degrees (that was my Bill Nye the Science Guy moment for the day). You only need to allow it to heat until the chocolate is completely melted and it is warmed to your liking. Remove from heat and pour into a mug. Stir in the vanilla extract. ...then maybe add some marshmallows ;)
